1.5 cups Heavy Cream
3/4 cup Parmesan Cheese
4-5 cloves Garlic
1 small Shallot
1/2 cup Chicken Broth
1/2 cup Sun-Dried Tomatoes
1/2 teaspoon Red Pepper Flakes
2 cups Fresh Spinach
Salt and Freshly Ground Black Pepper to taste
2 tablespoons Fresh Parsley

Instructions

  1. Prep Your Ingredients: Pat the shrimp dry, season with salt and pepper, and prepare the garlic, shallot, sun-dried tomatoes, spinach, and Parmesan cheese
  2. Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve 1 cup of pasta water
  3. Sear the Shrimp: Heat a skillet, add butter and olive oil, sear shrimp for 1-2 minutes per side, then remove and set aside
  4. Build the Sauce Base: In the same skillet, add more butter, shallot, garlic, and red pepper flakes, cooking until fragrant
  5. Simmer the Cream Sauce: Add broth, sun-dried tomatoes, and heavy cream, simmering until slightly thickened
  6. Add Cheese and Spinach: Stir in Parmesan until melted, then add spinach until wilted
  7. Combine Everything: Toss cooked pasta in sauce, adding reserved pasta water as needed for consistency
  8. Return Shrimp and Serve: Fold shrimp into the pasta, heat through, and adjust seasoning
  9. Garnish and Enjoy: Serve garnished with parsley and extra Parmesa
