1 large English Cucumber, diced
1 pint Cherry or Grape Tomatoes, halved
1/2 small Red Onion, finely diced
1 large Bell Pepper, diced
1/2 cup Fresh Parsley, chopped
1/4 cup Fresh Dill, chopped
1/4 cup Extra Virgin Olive Oil
3 tablespoons Fresh Lemon Juice
1 tablespoon Red Wine Vinegar
1 teaspoon Dried Oregano
1/2 teaspoon Salt, or to taste
1/4 teaspoon Black Pepper, or to taste

Instructions

  1. Prepare the Chickpeas: Drain and rinse the canned chickpeas, then pat dry and transfer to a mixing bowl
  2. Chop the Vegetables: Dice the cucumber, halve the tomatoes, finely dice the onion, and dice the bell pepper. Add all to the bowl with the chickpeas
  3. Chop the Herbs: Roughly chop the parsley and dill, then add to the bowl
  4. Make the Dressing: In a separate bowl, combine olive oil, lemon juice, red wine vinegar, oregano, salt, and pepper. Whisk until emulsified
  5. Combine and Dress: Pour the dressing over the salad and toss gently to combine
  6. Taste and Adjust: Taste the salad and adjust seasoning if necessary
  7. Chill: Cover and refrigerate for at least 30 minutes for best flavor
