25-30 cookies Crushed Chocolate Sandwich Cookies
6 tablespoons Melted Unsalted Butter
8 ounces Softened Cream Cheese
½ cup Granulated Sugar
1 ½ cups Very Cold Heavy Cream
¼ cup Green Crème de Menthe
2 tablespoons White Crème de Cacao
½ teaspoon Mint Extract
2-3 drops Green Food Coloring
Chocolate Shavings or Mini Chocolate Chips For garnish
Fresh Mint Sprigs For garnish

Instructions

  1. Finely crush the chocolate sandwich cookies and mix with melted butter
  2. Press the crumb mixture into a muffin tin lined with paper or foil liners
  3. Chill the crusts in the refrigerator to set
  4. Beat the softened cream cheese with granulated sugar until smooth
  5. Whip the very cold heavy cream until stiff peaks form
  6. Fold in crème de menthe, crème de cacao, and optional mint extract
  7. Gently fold the whipped cream into the cream cheese mixture until combined
  8. Spoon or pipe the filling into the chilled crusts
  9. Chill the pies for at least 4 hours or overnight to set
  10. Garnish with chocolate shavings and mint sprigs before serving

Notes

Mini Grasshopper Pies can be made alcoholic or non-alcoholic by substituting the liqueurs with milk and mint extract.

Store in an airtight container in the refrigerator for up to 3-4 days.
