These Mint Chocolate Brownies are a decadent combination of fudgy chocolate, refreshing mint, and silky ganache, creating a nostalgic dessert experience perfect for any occasion.

1 cup Unsalted Butter
1 ½ cups Granulated Sugar
½ cup Light Brown Sugar
3 Large Eggs
2 teaspoons Vanilla Extract
1 cup All-Purpose Flour
¾ cup Unsweetened Cocoa Powder
1 teaspoon Salt
½ cup Semi-Sweet Chocolate Chips
2 cups Confectioners’ Sugar
½ cup Unsalted Butter
1 teaspoon Peppermint Extract
2-3 tablespoons Milk
2-3 drops Green Food Coloring (optional)
1 cup Semi-Sweet Chocolate Chips
½ cup Heavy Cream

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper
  2. Melt the butter and mix with granulated and brown sugars until smooth
  3. Whisk in eggs one at a time and add vanilla extract
  4. Combine flour, cocoa powder, and salt in a separate bowl, then mix into wet ingredients until just combined. Fold in chocolate chips
  5. Pour batter into the pan and bake for 25-30 minutes
  6. Let the brownies cool completely in the pa
  7. For the mint layer, cream together softened butter and confectioners' sugar, add peppermint extract, and milk until smooth
  8. Spread mint frosting over cooled brownies and chill until firm
  9. Prepare ganache by melting chocolate chips with heavy cream, stirring until smooth
  10. Pour ganache over the mint layer and chill until set
  11. Cut into squares and serve

Notes

For a fudgier texture, slightly underbake the brownies.
