Ingredients

Scale

24 each Chocolate sandwich cookies
½ cup Unsalted butter, melted
2 tablespoons Granulated sugar
½ cup Unsalted butter
½ cup Unsweetened cocoa powder
1 ½ cups Granulated sugar
3 each Large eggs
2 tablespoons All-purpose flour
½ cup Heavy cream
1 teaspoon Vanilla extract
¼ teaspoon Salt
1 ½ cups Heavy cream, cold
¼ cup Powdered sugar
1 teaspoon Vanilla extract
As desired Chocolate shavings, cocoa powder, or mini chocolate chips

Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). Process the chocolate sandwich cookies into fine crumbs. Mix with melted butter and granulated sugar, then press into a 9-inch pie plate. Bake for 8-10 minutes and cool completely
  2. Make the Filling: Melt unsalted butter in a saucepan, stir in cocoa powder, and remove from heat. In a bowl, whisk together granulated sugar and eggs until fluffy, then combine with the chocolate mixture. Add flour, heavy cream, vanilla, and salt. Cook over low heat until thickened
  3. Pour and Chill: Pour the filling into the cooled crust and let cool at room temperature for 30 minutes, then refrigerate for at least 4 hours, preferably overnight
  4. Prepare the Topping: Whip heavy cream, powdered sugar, and vanilla until stiff peaks form
  5. Assemble and Serve: Spread whipped cream over the pie, garnish as desired, slice, and serve

Notes

Chilling the pie for at least 4 hours is crucial for the filling to set properly.
