This No-bake Ferrero Rocher Cheesecake is a luxurious dessert that brings together the decadent flavors of chocolate and hazelnuts without the need for an oven. It features a crunchy wafer crust, a creamy Nutella-infused filling, and is garnished with Ferrero Rocher candies for an indulgent touch.

200 g Chocolate Wafer Cookies
1/2 cup Hazelnuts (toasted, skinned)
2 tbsp Granulated Sugar
1/2 cup Unsalted Butter (melted)
24 oz Cream Cheese (full-fat, softened)
1 cup Nutella (or other hazelnut spread)
1 cup Powdered Sugar
1 1/2 cups Heavy Cream (cold)
1 tsp Vanilla Extract
10-12 Ferrero Rocher Candies (chopped)
4 oz Milk Chocolate (melted & cooled)
1/4 tsp Pinch of Salt
8-10 Ferrero Rocher Candies (for topping)
1/4 cup Chopped Toasted Hazelnuts

Instructions

  1. Lightly grease a 9-inch springform pan and line the bottom with parchment paper
  2. In a food processor, combine the chocolate wafer cookies, toasted hazelnuts, and granulated sugar. Pulse until fine crumbs form. Add the melted butter and pulse again until the mixture resembles wet sand. Press firmly into the bottom of the prepared pan and freeze for 15-20 minutes
  3. Gently melt the milk chocolate and set aside to cool slightly
  4. In a mixing bowl, beat the softened cream cheese with Nutella, powdered sugar, vanilla extract, and a pinch of salt until smooth and creamy. Add the slightly cooled melted chocolate and mix until fully combined
  5. In a separate bowl, whip the cold heavy cream until stiff peaks form, being careful not to over-whip
  6. Gently fold one third of the whipped cream into the cream cheese mixture, then fold in the remaining whipped cream and chopped Ferrero Rocher candies
  7. Pour the filling over the chilled crust and smooth the top. Cover and refrigerate for at least 6-8 hours, preferably overnight
  8. Garnish with whole or halved Ferrero Rocher candies and chopped hazelnuts before serving

Notes

Make sure to soften the cream cheese properly before mixing to avoid lumps.

Chill your mixing bowl for better whipped cream consistency.
