A light and creamy No Bake Strawberry Cheesecake with a crunchy graham cracker crust, perfect for summer gatherings.

1 ½ cups Graham cracker crumbs
¼ cup Granulated sugar
6 tablespoons Unsalted butter, melted
2 (8-ounce) blocks Cream cheese, full-fat, softened
¾ cup Granulated sugar
1 tablespoon Lemon juice, fresh
1 teaspoon Vanilla extract
1 ½ cups Heavy cream, cold
2 cups Fresh strawberries, hulled and sliced
2 tablespoons Granulated sugar (or to taste)
1 teaspoon Lemon juice, fresh

Instructions

  1. Prepare the Crust: In a medium bowl, mix graham cracker crumbs, ¼ cup of sugar, and melted butter. Press into a 9-inch springform pan and chill
  2. Make the Strawberry Topping: Combine 1 cup sliced strawberries, 2 tablespoons sugar, and 1 teaspoon lemon juice in a bowl. Set aside
  3. Whip the Cream Cheese Mixture: Beat the cream cheese until smooth, then add ¾ cup sugar, lemon juice, and vanilla extract. Mix until fluffy
  4. Whip the Heavy Cream: In a separate bowl, whip the cold heavy cream until stiff peaks form
  5. Combine Filling Ingredients: Gently fold the whipped cream into the cream cheese mixture until just combined
  6. Assemble the Cheesecake: Pour the cream cheese filling over the chilled crust and smooth the top. Cover and refrigerate for at least 6 hours
  7. Add Final Topping: After chilling, top with the macerated strawberries and additional sliced strawberries before serving

Notes

For clean slices, use a warm knife and wipe it between cuts.

Best to chill overnight for optimal texture.
