1 cup Rolled Oats
1/2 cup All-Purpose Flour
2 large Eggs
1 1/2 cups Milk
2 tablespoons Granulated Sugar
1 teaspoon Vanilla Extract
1/4 teaspoon Salt
2 tablespoons Melted Butter

Instructions

  1. Blend the oats, all-purpose flour, eggs, milk, sugar, vanilla extract, and salt in a high-speed blender until smooth
  2. Add melted butter and blend for a few more seconds
  3. Transfer the batter to a bowl, cover it, and let it rest in the refrigerator for 30 minutes to 1 hour
  4. Heat an 8-inch non-stick pan over medium heat and lightly grease it
  5. Pour 1/4 cup of batter into the pan and swirl to coat evenly
  6. Cook for 1-2 minutes until the edges brown, then flip and cook for another 30-60 seconds
  7. Repeat with remaining batter, stacking finished crepes on a plate. Serve warm

For gluten-free crepes, substitute all-purpose flour with the same amount of gluten-free oat flour.
