A delicious and wholesome one-pan meal featuring juicy chicken thighs, nutty bulgur, sweet cherry tomatoes, and creamy feta, perfect for busy weeknights or relaxed weekend dinners.

Ingredients

1.5 lbs Boneless, Skinless Chicken Thighs
1 cup Medium-Grain Bulgur
2 cups Cherry Tomatoes
1/2 small Red Onio
3 cloves Garlic
2 cups Chicken Broth
4 oz Feta Cheese
2 tbsp Olive Oil
1 tsp Dried Oregano
1/4 cup Fresh Parsley
1/2 Lemo
Salt to taste
Black Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C)
  2. Pat the chicken thighs dry and season with salt, pepper, and oregano
  3. Optional: Sear chicken in a skillet with olive oil for 2-3 minutes per side
  4. Spread rinsed bulgur in a baking dish and scatter onions and garlic on top
  5. Add halved tomatoes and pour chicken broth over the bulgur
  6. Arrange chicken on top and cover with foil
  7. Bake for 25 minutes, then uncover and continue baking for 15-20 minutes until cooked through
  8. Crumble feta over the dish, squeeze lemon juice, and garnish with parsley
  9. Let rest for 5 minutes before serving

Notes

Use good quality feta for best flavor.

Ensure bulgur is rinsed to avoid mushiness.
