1.5 lbs Boneless, Skinless Chicken Thighs
4 cups Broccoli Florets
1 bunch (about 1 lb) Asparagus Spears
6-8 cloves Garlic, minced
1/2 cup Unsalted Butter, melted
2 tablespoons Olive Oil
2 tablespoons Lemon Juice
1 teaspoon Dried Italian Seasoning
1/2 teaspoon Smoked Paprika
1 teaspoon Salt
1/2 teaspoon Black Pepper
2 tablespoons Fresh Parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper
  2. Pat the chicken thighs dry with paper towels and season generously with salt and pepper
  3. In a large bowl, combine broccoli florets and asparagus. Drizzle with olive oil, salt, and pepper and toss to coat
  4. In a small microwave-safe bowl, melt the butter and add minced garlic, lemon juice, Italian seasoning, and smoked paprika; stir to combine
  5. Arrange the seasoned chicken on one side of the baking sheet and the seasoned vegetables on the other side
  6. Pour half of the garlic butter sauce over the chicken and the rest over the vegetables
  7. Roast in the oven for 20-25 minutes until chicken is cooked through and vegetables are tender-crisp
  8. Let the chicken rest for 5 minutes before slicing and garnish with fresh parsley
