One Pot Lemon Chicken and Rice

A wholesome and flavorful One Pot Lemon Chicken and Rice that combines juicy chicken thighs with vibrant lemon and aromatic herbs, all cooked in one pot for a satisfying weeknight meal.

Ingredients

2-2.5 lbs Bone-in, Skin-on Chicken Thighs
2 tbsp Olive Oil
1 medium Yellow Onion, chopped
4 cloves Garlic, minced
1.5 cups Long-Grain White Rice
3 cups Chicken Broth, low sodium
1 large Lemon, juiced and zested
1/4 cup Fresh Parsley, chopped
1 tsp Dried Oregano
1 tsp Salt
1/2 tsp Black Pepper

Instructions

  1. Pat the chicken thighs thoroughly dry with paper towels and season with salt, pepper, and dried oregano
  2. Heat olive oil in a large pot over medium-high heat, then sear the chicken thighs skin-side down for 6-8 minutes until golden brown. Flip and sear for another 2-3 minutes
  3. Remove chicken from the pot and set aside. Add chopped onion to the pot and sauté for 3-5 minutes, then add minced garlic and cook for an additional minute
  4. Stir in long-grain rice, then pour in chicken broth and add juice of half a lemon. Bring to a gentle simmer
  5. Nestle seared chicken thighs skin-side up into the pot, cover, reduce heat to low, and cook for 20-25 minutes without lifting the lid
  6. Remove pot from heat and let it rest for 10 minutes, then fluff the rice and stir in parsley and zest from the remaining half lemon before serving

Notes

For extra flavor, consider adding more lemon zest just before serving.
