  1. In a large mixing bowl, whisk together all-purpose flour, granulated sugar, baking powder, baking soda, and salt until no lumps remai

  3. Combine wet and dry ingredients, mixing gently until just combined. A few small lumps are fine
  4. Heat a non-stick skillet over medium-low heat and grease it with oil or butter
  5. Drop dollops of batter onto the hot skillet, about 1 tablespoon each, leaving space between each
  6. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 1-2 minutes until golde
  7. Transfer to a plate and cover loosely with foil to keep warm while cooking remaining batter
