Parmesan Roasted Carrots are a delicious and easy side dish that elevates simple carrots with olive oil, garlic powder, and freshly grated Parmesan cheese, achieving a crispy texture with a cheesy crust.

2 pounds Carrots
3 tablespoons Olive Oil
½ cup Parmesan Cheese
1 teaspoon Garlic Powder
1 teaspoon Dried Parsley
½ teaspoon Salt
¼ teaspoon Black Pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and place a large baking sheet inside to preheat
  2. Peel and trim carrots, then cut them into even pieces (1 to 1.5-inch chunks)
  3. In a large mixing bowl, combine carrots, olive oil, garlic powder, dried parsley, salt, and black pepper; toss to coat
  4. Sprinkle freshly grated Parmesan cheese over carrots and toss gently to distribute
  5. Spread the seasoned carrots in a single layer on the preheated baking sheet
  6. Roast in the oven for 20-30 minutes, stirring halfway through, until tender and golden brow
  7. Serve hot, optionally garnished with fresh parsley
