Pastel Sugar Cookie Sandwiches are delightful treats that combine tender sugar cookies with creamy pastel buttercream frosting. Perfect for celebrations or everyday joys.

3 cups All-purpose flour
1 teaspoon Baking powder
½ teaspoon Salt
1 cup Unsalted butter, softened
1 cup Granulated sugar
1 Large egg
2 teaspoons Vanilla extract
1 cup Unsalted butter, softened (for frosting)
4 cups Powdered sugar, sifted
3-4 tablespoons Heavy cream or milk
1 teaspoon Vanilla extract (for frosting)
Pinch of salt (optional)
Various Gel food coloring, pastel colors

Instructions

  1. Whisk together the flour, baking powder, and salt in a medium bowl
  2. Cream together softened butter and granulated sugar until light and fluffy
  3. Beat in the egg and vanilla extract, mixing until incorporated
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined
  5. Divide dough, flatten into disks, wrap in plastic, and refrigerate for at least 1 hour
  6. Preheat oven to 375°F (190°C), and line baking sheets with parchment paper
  7. Roll out one disk of dough to ¼ inch thickness and cut into desired shapes
  8. Bake for 8-10 minutes until edges are lightly golden. Cool completely on a wire rack
  9. Beat softened butter for frosting until creamy, then gradually add powdered sugar
  10. Add heavy cream and vanilla extract, and beat until fluffy and smooth
  11. Divide frosting and tint with gel food coloring
  12. Pipe frosting onto the flat side of one cookie and top with another cookie, flat side dow
