½ cup Unsalted butter
1 cup Granulated sugar
½ cup Packed light brown sugar
½ cup Creamy peanut butter
2 Large eggs
1 teaspoon Vanilla extract
½ cup Confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
  4. Beat in the creamy peanut butter until fully incorporated and smooth
  5. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined
  7. Cover the bowl with plastic wrap and chill the dough for at least 30 minutes
  8. Pour confectioners' sugar into a shallow bowl
  9. Scoop the dough into 1-inch balls and roll each ball in granulated sugar and then in confectioners' sugar
  10. Place the rolled dough balls on the prepared baking sheets about 2 inches apart
  11. Bake for 9-11 minutes, or until edges are set and centers look slightly soft
  12. Let cool on the baking sheets for 5 minutes before transferring to a wire rack
