Quick Mini Strawberry Custard Tarts are delightful little desserts that feature a crispy buttery crust filled with smooth vanilla custard and topped with fresh strawberries. They are easy to make and perfect for any occasion.

Ingredients

1 ½ cups All-purpose flour
½ cup Unsalted butter
2 tablespoons Granulated sugar
3-4 tablespoons Ice water
1 ½ cups Whole milk
½ cup Granulated sugar
4 large Egg yolks
3 tablespoons Cornstarch
1 teaspoon Vanilla extract
¼ teaspoon Pinch of salt
1 lb Fresh strawberries
2 tablespoons Apricot jam (optional)

Instructions

  1. Step 1: Prepare the tart shells by mixing flour, sugar, and salt, cutting in the butter, adding ice water, chilling the dough, rolling it out, cutting circles, pressing into a mini muffin tin, pricking, and baking
  2. Step 2: Make the vanilla custard by heating milk, mixing sugar, egg yolks, cornstarch, salt, tempering the mixture, cooking until thickened, adding vanilla, and chilling
  3. Step 3: Assemble the tarts by filling tart shells with custard, topping with strawberries, and optionally glazing with apricot jam

Notes

Use cold butter for a flaky crust.

Tempering egg yolks prevents scrambling.

Chill the custard for best texture.
