Refreshing Lemoncello Tiramisu is a vibrant twist on the classic dessert, featuring zesty lemon, creamy mascarpone, and delicate ladyfingers for a light and refreshing experience.

6 Large Eggs, yolks separated from whites
1 cup Granulated Sugar
16 oz Mascarpone Cheese, chilled
1 cup Heavy Cream, chilled
1 cup Limoncello Liqueur
2 tablespoons Fresh Lemon Juice
24-30 Ladyfingers (Savoiardi)
1 tablespoon Fresh Lemon Zest (for garnish)
A few sprigs Fresh Mint Leaves (for garnish)
Pinch of Salt

Instructions

  1. In a heatproof bowl, whisk egg yolks with 1/2 cup sugar until pale. Cook over simmering water, whisking for 8-10 minutes until thick and 160°F (71°C). Remove from heat
  2. Fold in chilled mascarpone until smooth
  3. In a separate bowl, whip egg whites with a pinch of salt until soft peaks form. Gradually add 1/2 cup sugar until stiff peaks form
  4. Whip heavy cream in another bowl until stiff peaks form
  5. Gently fold the egg whites into the mascarpone mixture, then fold in whipped cream
  6. Combine limoncello and lemon juice in a shallow dish
  7. Dip ladyfingers quickly in the limoncello mixture and place a layer in a 9×13 inch dish
  8. Spread half the mascarpone cream over the ladyfingers
  9. Add another layer of dipped ladyfingers, then spread the remaining mascarpone cream on top
  10. Cover and refrigerate for at least 4-6 hours, preferably overnight
  11. Garnish with lemon zest and mint before serving

Use high-quality ingredients for the best results.

Ensure to control the soak time of the ladyfingers to avoid sogginess.

For a non-alcoholic version, use lemon syrup instead of limoncello.
