16 oz Cremini Mushrooms
4 cloves Garlic
1-inch piece Fresh Ginger
1 medium Red Bell Pepper
1 cup Broccoli Florets
1 large Carrot
3-4 stalks Green Onions
4 tbsp Low-Sodium Soy Sauce
2 tbsp Hoisin Sauce
1 tbsp Rice Vinegar
1 tsp Sesame Oil
1 tbsp Cornstarch
2 tbsp Water or Vegetable Broth
1 tsp Brown Sugar or Maple Syrup (optional)
2 tbsp Vegetable Oil
1 tsp Toasted Sesame Seeds (optional)

Instructions

  1. Prep Your Ingredients: Slice mushrooms, bell pepper, and carrots. Mince garlic and ginger. Whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, and optional brown sugar in a bowl
  2. Heat Your Wok or Large Skillet: Get the wok very hot before adding oil
  3. Sauté the Mushrooms: Add 1 tablespoon of oil, then the mushrooms, and let them brown for 2-3 minutes
  4. Aromatics and Harder Vegetables: Add remaining oil, white parts of onions, garlic, and ginger; stir-fry for 30 seconds, then add carrots and broccoli for 2-3 minutes
  5. Add Softer Vegetables: Toss in red bell pepper and stir-fry for 1-2 minutes
  6. Return Mushrooms and Add Sauce: Add browned mushrooms and sauce mixture to the wok
  7. Thicken the Sauce: Add cornstarch slurry while stirring constantly until sauce thickens
  8. Final Touches: Stir in green parts of the onions and taste to adjust seasoning
  9. Serve: Transfer to plates, garnish with sesame seeds, and serve immediately

Cook in batches to avoid overcrowding the pan.
