A rich and flavorful savory lentil bowl that combines earthy lentils with aromatic vegetables and spices, perfect for a comforting, nutritious meal.

2 tablespoons Olive oil
1 medium Yellow onion, diced
2 medium Carrots, diced
2 stalks Celery, diced
4 cloves Garlic, minced
1 cup Brown or green lentils, rinsed
6 cups Vegetable broth
1 teaspoon Smoked paprika
1 teaspoon Cumi
½ teaspoon Dried thyme
1 Bay leaf
1 (14.5 ounce) can Canned diced tomatoes, undrained
1-2 tablespoons Red wine vinegar or lemon juice
Salt to taste
Black pepper to taste
¼ cup Fresh parsley, chopped (for garnish)

Instructions

  1. Prep Your Veggies: Gather and prepare all your vegetables. Dice the onion, carrots, and celery. Mince your garlic
  2. Sauté the Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery. Sauté for 7-8 minutes until softened
  3. Add Garlic and Spices: Stir in the minced garlic, smoked paprika, cumin, and dried thyme. Cook for another 1-2 minutes until fragrant
  4. Introduce Lentils and Tomatoes: Pour in the rinsed lentils and the can of diced tomatoes (undrained). Mix well
  5. Simmer to Perfection: Add the vegetable broth and bay leaf. Bring to a boil, then reduce heat and simmer for 25-35 minutes until lentils are tender
  6. Finish with Acidity: Remove the bay leaf and stir in the vinegar or lemon juice. Adjust seasoning with salt and pepper
  7. Garnish: Ladle into bowls and garnish with fresh parsley. Serve hot
