Soft Green Mint Chocolate Chip Cookies are tender, chewy cookies bursting with vibrant mint flavor and rich chocolate chunks. Perfect for any occasion, these cookies are easy to make and delightful to share.

2 ½ cups All-purpose flour
1 teaspoon Baking soda
½ teaspoon Salt
1 cup Unsalted butter, softened
¾ cup Granulated sugar
¾ cup Packed light brown sugar
2 Large eggs
1 teaspoon Pure vanilla extract
1 ½ teaspoons Pure mint extract
½ – 1 teaspoon Green gel food coloring
1 ½ cups Semi-sweet chocolate chips
½ cup Optional: Andes mint chips or chopped mint chocolate candies

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this aside
  3. In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, mint extract, and green gel food coloring until evenly distributed
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined
  6. Gently fold in the semi-sweet chocolate chips and any optional mint chips or chopped mint chocolate candies
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spaced about 2 inches apart
  8. Bake for 9-11 minutes, or until the edges are lightly golden and the centers are still soft
  9. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack
  10. Serve your freshly baked Soft Green Mint Chocolate Chip Cookies warm or at room temperature

Notes

For thicker, chewier cookies, chill the dough for at least 30 minutes before baking.
