These Strawberry Cheesecake Bars are a delightful handheld treat that combines a buttery graham cracker crust, a rich cream cheese filling, and a vibrant fresh strawberry topping. Perfect for potlucks, birthday parties, or a sweet afternoon indulgence.

1 ½ cups Graham cracker crumbs
¼ cup Granulated sugar
½ cup Unsalted butter, melted
24 oz Cream cheese, full-fat, softened
1 cup Granulated sugar
3 Large eggs
½ cup Sour cream, full-fat
1 teaspoon Vanilla extract
2 tablespoons All-purpose flour
2 cups Fresh strawberries, hulled and sliced
2 tablespoons Granulated sugar (or to taste)
1 tablespoon Lemon juice, fresh

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper
  2. In a medium bowl, combine the graham cracker crumbs, ¼ cup granulated sugar, and melted butter. Mix thoroughly
  3. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 8-10 minutes
  4. Reduce the oven temperature to 325°F (160°C)
  5. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup of sugar
  6. Add the eggs one at a time, mixing until just combined. Stir in sour cream, vanilla, and flour
  7. Pour the cheesecake mixture over the pre-baked crust. Bake for 35-45 minutes
  8. Let cool in the oven for about 1 hour, then refrigerate for at least 4 hours
  9. Toss sliced strawberries with 2 tablespoons sugar and lemon juice. Let marinate for 15-20 minutes
  10. Spoon the strawberries over the chilled cheesecake bars before serving

Notes

For clean cuts, use a warm knife and wipe between slices.

Store bars without the strawberry topping if keeping for more than a few hours.
