1 cup Celery, finely diced

½ cup Pecans or Walnuts, toasted and chopped
¼ cup Fresh Mint or Basil, chopped (optional)
½ cup Mayonnaise, full-fat
¼ cup Plain Greek Yogurt
1-2 tablespoons Honey or Maple Syrup, adjust to taste
1 tablespoon Fresh Lemon Juice
1 teaspoon Dijon Mustard
1 teaspoon Poppy Seeds
½ teaspoon Salt, to taste
¼ teaspoon Black Pepper, freshly ground, to taste

Instructions

  1. Prepare the Chicken: Cook chicken breasts until thoroughly cooked, let cool, then shred or dice into bite-sized pieces
  2. Chop the Fresh Ingredients: Hull and quarter strawberries, finely dice celery, and mince red onion. Optional: chop fresh herbs
