1 lb Fresh Strawberries
1/4 cup Red Onion (optional)
1/2 cup Feta Cheese (crumbled, optional)
1/2 cup Pecans or Almonds (toasted)
1/2 cup Olive Oil (extra virgin)
1/4 cup Apple Cider Vinegar
2-3 tablespoons Granulated Sugar (or maple syrup)
1 teaspoon Dijon Mustard
1 tablespoon Poppy Seeds
1/2 teaspoon Salt
1/4 teaspoon Black Pepper

Instructions

  1. Prepare the Poppyseed Dressing: In a medium bowl or a jar with a tight-fitting lid, combine the olive oil, apple cider vinegar, sugar, Dijon mustard, poppy seeds, salt, and black pepper. Whisk or shake until well emulsified

  3. Prepare the Strawberries: Hull and slice the strawberries, then add to the salad bowl with the spinach

  5. Assemble the Salad: Drizzle half to two-thirds of the dressing over the salad and gently toss to coat
