Sweet Chili Pineapple Shrimp is a quick and flavorful dish combining succulent shrimp with fresh pineapple, enhanced by a sweet chili sauce.

Ingredients

1.5 lbs Large Shrimp
2 cups Fresh Pineapple, diced
¾ cup Sweet Chili Sauce
3 cloves Garlic, minced
1 tbsp Fresh Ginger, grated
2 tbsp Soy Sauce
1 tbsp Rice Vinegar
1 tsp Sesame Oil, toasted (optional)
2 tbsp Olive Oil (or Avocado Oil)
2-3 Green Onions, chopped
1 tbsp Sesame Seeds
Salt & Black Pepper, to taste

Instructions

  1. If using frozen shrimp, thaw them completely under cold running water or overnight in the refrigerator. Pat the shrimp dry and season lightly with salt and black pepper
  2. Peel and core the fresh pineapple, cutting it into bite-sized chunks
  3. In a medium bowl, combine sweet chili sauce, minced garlic, grated ginger, soy sauce, rice vinegar, and sesame oil. Whisk together
  4. Heat olive oil in a large skillet over medium-high heat. Add seasoned shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove from skillet
  5. In the same skillet, add diced pineapple and cook for 2-3 minutes until softened and slightly caramelized
  6. Return the shrimp to the skillet, pour the sauce mixture over, and toss to coat. Cook for another 1-2 minutes until the sauce thickens
  7. Remove from heat and garnish with green onions and sesame seeds. Serve immediately

Notes

For best results, use fresh shrimp and a quality sweet chili sauce. Adjust spice level as desired.
