2 ¼ teaspoons Active Dry Yeast
1 tablespoon Granulated Sugar
3 ½ – 4 cups All-Purpose Flour
1 ½ teaspoons Salt
3 tablespoons Olive Oil
4 tablespoons Unsalted Butter, melted
4-5 cloves Garlic, minced
¼ cup Fresh Parsley, chopped
2 tablespoons Fresh Chives, chopped
½ cup Parmesan Cheese, grated
1 cup Mozzarella Cheese, shredded

Instructions

  1. Activate the Yeast: In a large bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy
  2. Form the Dough: Add 3 cups of flour, salt, and 3 tablespoons of olive oil to the yeast mixture. Mix until a shaggy dough forms, adding more flour as needed
  3. Knead the Dough: Transfer the dough to a floured surface and knead for 8-10 minutes until smooth and elastic
  4. First Rise: Grease a bowl with olive oil, place dough inside, cover, and let rise in a warm place for 1-1.5 hours until doubled in size
  5. Prepare the Filling: Melt the butter and mix with garlic, parsley, chives, and Parmesan cheese
  6. Shape the Bread: Punch down the dough, roll into a rectangle, and spread the filling, then sprinkle mozzarella on top
  7. Roll and Slice: Roll the dough tightly into a log, cut it lengthwise, and braid the halves
  8. Second Rise: Place in a greased loaf pan, cover, and let rise for 30-45 minutes
  9. Bake: Preheat oven to 375°F and bake for 30-35 minutes until golden brow
  10. Cool: Transfer to a wire rack to cool for at least 15-20 minutes before slicing
