This Taiwanese Braise with Beef, Tofu & Eggs is a comforting and flavorful dish featuring tender beef, silky tofu, and hard-boiled eggs simmered in a rich broth. Perfect for meal prep or feeding a crowd.

Ingredients

2.5 lbs Beef chuck or brisket, cut into 1.5-inch cubes
1 block (14-16 oz) Firm or extra-firm tofu, pressed and cut into 1-inch cubes
6-8 Hard-boiled eggs, peeled
2 tbsp Vegetable oil
8-10 cloves Garlic, roughly chopped
2 inch piece Ginger, sliced or roughly chopped
3-4 stalks Scallions, roughly chopped
1/2 cup Light soy sauce
1/4 cup Dark soy sauce
1/4 cup Shaoxing wine
1.5 oz (approx. 2-3 pieces) Rock sugar
3-4 pods Star anise
1 (3-inch) Cinnamon stick
2 Bay leaves
4-5 cups Water or beef broth
Fresh cilantro, chopped for garnish

Instructions

  1. Prepare the tofu by pressing it for at least 30 minutes, then cut into cubes
  2. Sear the tofu in oil until golden, set aside
  3. Sear the beef in batches until browned, then set aside
  4. Sauté garlic, ginger, and scallions in the pot until fragrant
  5. Deglaze with Shaoxing wine and add soy sauces, rock sugar, spices, and broth
  6. Return beef to the pot and cover with broth, simmer for 1.5 to 2 hours
  7. Add tofu and hard-boiled eggs, simmer for another 30-45 minutes
  8. Adjust seasoning and serve over rice, garnished with cilantro

Notes

For a vegetarian option, omit beef and increase tofu quantity.

Customize with vegetables like daikon or carrots.
