A delicious and satisfying Teriyaki Chicken Bowl that combines tender chicken, vibrant vegetables, and a homemade teriyaki sauce for a balanced meal in one bowl.

1.5 lbs Boneless, Skinless Chicken Thighs
1/2 cup Soy Sauce (low sodium)
1/4 cup Miri
1/4 cup Sake (optional)
1/4 cup Brown Sugar (packed)
1 tbsp Fresh Ginger (grated)
2 cloves Garlic (minced)
1 tbsp Cornstarch
2 tbsp Cold Water
1 tbsp Sesame Oil
1 tbsp Vegetable Oil
2 cups Broccoli Florets
4 cups Cooked Rice
2 Green Onions (sliced)
1 tbsp Sesame Seeds (toasted)

Instructions

  1. Cut chicken thighs into uniform 1-inch cubes and pat them dry
  2. In a medium bowl, combine soy sauce, mirin, sake, brown sugar, ginger, and garlic, and whisk until sugar is dissolved
  3. In a small bowl, whisk cornstarch with cold water until smooth
  4. Heat vegetable oil and sesame oil in a large skillet over medium-high heat and sear chicken until golden brow
  5. Reduce heat and pour in the teriyaki sauce, bringing it to a simmer
  6. Whisk in the cornstarch slurry and stir until thickened
  7. Return chicken to the skillet, tossing to coat with sauce
  8. Steam or stir-fry broccoli florets until tender-crisp
  9. Assemble bowls with rice, chicken, and broccoli
  10. Garnish with sliced green onions and sesame seeds

Notes

Can customize with different proteins or vegetables.

Use tamari for a gluten-free option.
