1.5 lbs Boneless, Skinless Chicken Breasts
1/2 cup Dill Pickle Juice
2 Large Eggs
1/2 cup All-Purpose Flour
1.5 cups Panko Breadcrumbs
1/2 cup Grated Parmesan Cheese
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1 tablespoon Dried Dill
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
1-2 cups Vegetable Oil or Canola Oil
Fresh Dill (optional)
Dill Pickle Slices (optional)

Instructions

  1. Lay your chicken breasts on a cutting board. Cover them with plastic wrap and pound them to an even 1/2-inch thickness
  2. Place the pounded chicken breasts in a shallow dish or resealable bag. Pour dill pickle juice over the chicken and marinate in the refrigerator for at least 30 minutes, up to 2 hours
  3. Prepare your dredging stations: 1) Flour mixture with flour, salt, and pepper; 2) Egg wash with beaten eggs; 3) Breading mixture with panko, Parmesan, garlic powder, onion powder, dill, and seasoning
  4. Remove chicken from the pickle juice, dredge in flour, dip in egg, and coat with the breadcrumb mixture. Place breaded chicken on a clean plate
  5. Heat oil in a skillet over medium-high heat to 350-375°F
  6. Fry the chicken pieces for 3-5 minutes per side until golden brown and cooked through to 165°F
  7. Transfer cooked chicken to a wire rack to drain excess oil
  8. Garnish with fresh dill and pickle slices, then serve

Notes

Pound chicken evenly for uniform cooking.

Do not over-marinate to prevent mushy chicken.
