This Tuscan Chicken Pasta delivers a restaurant-quality meal right from your home kitchen, combining tender chicken with a rich, creamy sauce featuring spinach, sun-dried tomatoes, and parmesan, making it a comforting dish that evokes the flavors of Tuscany.

1.5 lbs Boneless, Skinless Chicken Breasts
1 tsp Salt
0.5 tsp Black Pepper
1 tsp Smoked Paprika
0.5 tsp Garlic Powder
2 tbsp Olive Oil
4-5 cloves Garlic (minced)
0.5 cup Sun-Dried Tomatoes (oil-packed, drained & chopped)
1 cup Chicken Broth
1.5 cups Heavy Cream
0.5 cup + more for serving Parmesan Cheese (freshly grated)
5-6 oz Fresh Spinach
12-16 oz Penne, Fettuccine, or Linguine
1 tsp Italian Seasoning
For garnish Fresh Parsley (chopped)

Instructions

  1. Prepare the Chicken: Pat chicken dry, cut into 1-inch pieces, and season with salt, black pepper, smoked paprika, and garlic powder
  2. Cook the Chicken: Heat olive oil in a skillet over medium-high heat, sear chicken pieces until golden brown, then set aside
  3. Sauté Aromatics and Tomatoes: Reduce heat, add remaining olive oil, sauté garlic and sun-dried tomatoes until fragrant
  4. Deglaze and Build the Sauce: Pour in chicken broth, scrape browned bits, simmer until reduced
  5. Add Cream and Seasoning: Stir in heavy cream and Italian seasoning, let it simmer until thickened
  6. Cook the Pasta: Boil salted water, cook pasta to al dente, reserving 1 cup of pasta water
  7. Incorporate Cheese and Spinach: Stir in Parmesan cheese and then fresh spinach until wilted
  8. Combine Everything: Return chicken and pasta to the skillet, toss to coat, adjusting consistency with reserved pasta water
  9. Serve: Garnish with parsley and additional Parmesan, serve warm
