6-7 medium Ripe Bananas
½ cup Unsalted Butter
¾ cup Dark Brown Sugar
¼ cup Dark Rum
1 tablespoon Fresh Lemon Juice
1 teaspoon Ground Cinnamo
¼ teaspoon Nutmeg
¼ teaspoon Salt
1 teaspoon Vanilla Extract
1 ½ cups All-Purpose Flour
½ cup Granulated Sugar
1 ½ teaspoons Baking Powder
½ teaspoon Salt
½ cup Cold Unsalted Butter
½ cup Whole Milk
½ teaspoon Vanilla Extract
1 tablespoon Turbinado Sugar (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish
  2. In a large skillet, melt ½ cup butter over medium heat. Add dark brown sugar, cinnamon, nutmeg, and salt, stirring until bubbly
  3. Add dark rum and let it simmer for a minute. Remove from heat and stir in lemon juice and vanilla
  4. Fold in sliced bananas and transfer to the baking dish
  5. In a bowl, whisk together flour, sugar, baking powder, and salt
  6. Cut in ½ cup cold butter until resembling coarse crumbs. Mix in milk and vanilla until just combined
  7. Drop spoonfuls of the topping over the banana mixture. Sprinkle with turbinado sugar if desired
  8. Bake for 30-35 minutes until golden brow
