Crispy Zucchini Fries are a delicious and healthy alternative to traditional potato fries, transformed by Chef Zaki's recipe that is perfect for kids and adults alike. These golden, perfectly seasoned zucchini sticks are addictive and sure to please even the pickiest of eaters.

2-3 Medium Zucchini
1/4 cup All-Purpose Flour
2 Large Eggs
1 cup Panko Breadcrumbs
1/4 cup Grated Parmesan Cheese
1 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Dried Oregano
1/2 teaspoon Salt
1/4 teaspoon Black Pepper
Olive Oil Spray as needed

Instructions

  1. Prep Your Zucchini: Wash the zucchini thoroughly, trim off both ends, and cut them into fry shapes, about 1/4 to 1/2 inch thick and 3-4 inches long
  2. Blot, Blot, Blot!: Spread the zucchini sticks on paper towels, sprinkle lightly with salt, and let them sit for 10-15 minutes. Blot them dry with more paper towels
  3. Set Up Breading Stations: Prepare three shallow dishes. Place flour in the first, beaten eggs in the second, and a mixture of Panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper in the third
  4. Preheat Oven & Prep Baking Sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, lightly sprayed with olive oil
  5. Bread the Zucchini Fries: Dip zucchini sticks first in flour, then in beaten eggs, and finally in the breadcrumb mixture. Arrange them in a single layer on the baking sheet
  6. Lightly Spray: Spray the tops of the zucchini fries with olive oil spray
  7. Bake to Perfection: Bake for 15-20 minutes, carefully flip each fry, and bake for another 10-15 minutes until golden brow
  8. Serve Immediately: Remove from the oven and serve hot with your favorite dipping sauce

Notes

Do not skip the salting and blotting process to achieve crispy fries.
