16 ounces Frozen Sweet Corn, thawed
1/2 cup Red Onion, finely diced
1/2 cup Green Bell Pepper, finely diced
1 Jalapeño, finely diced, seeds removed
1 cup Cheddar Cheese, shredded
1/2 cup Mayonnaise
1/2 cup Sour Cream
1 tablespoon Lime Juice, fresh
1 teaspoon Chili Powder
1/2 teaspoon Cumi
1/2 teaspoon Salt, or to taste
1/4 teaspoon Black Pepper, or to taste
Large bag Frito Corn Chips, about 9.25 ounces
1/4 cup Fresh Cilantro, chopped

Instructions

  1. Prepare your veggies: thaw frozen corn, finely dice red onion, green bell pepper, and jalapeño (remove seeds). Place into a large mixing bowl
  2. Whisk the dressing: combine mayonnaise, sour cream, lime juice, chili powder, cumin, salt, and black pepper in a separate bowl until smooth
  3. Combine ingredients: pour dressing over the vegetable mixture and fold in gently until well coated
  4. Chill for flavors: refrigerate for at least 30 minutes, preferably an hour
  5. Add the Fritos & serve: fold in Fritos just before serving and garnish with remaining Fritos and cilantro

Notes

Add the Fritos right before serving to maintain their crunch. Leftovers should be stored without mixed Fritos.
