This Easy Frito Corn Salad Recipe is a delightful mix of sweet corn, crispy bell peppers, zesty onions, creamy dressing, and of course, crunchy Frito chips. It's the perfect side dish for summer potlucks, barbecues, and family gatherings.

3 cups Frozen Cor
1/2 cup Mayonnaise
1/2 cup Sour Cream
1 cup Shredded Cheddar Cheese
1/2 cup Red Bell Pepper, finely diced
1/4 cup Red Onion, finely diced
1 small Jalapeño, minced (optional)
1/4 cup Fresh Cilantro, chopped
1 teaspoon Chili Powder
1/2 teaspoon Cumi
1/2 teaspoon Garlic Powder
1/2 teaspoon Salt (or to taste)
1/4 teaspoon Black Pepper, freshly ground
6-8 oz bag Frito Corn Chips

Instructions

  1. Thaw and dry the frozen corn thoroughly to prevent a watery salad
  2. Finely dice the red bell pepper and red onion; mince the jalapeño and chop the cilantro
  3. Mix the dressing in a large bowl by combining mayonnaise, sour cream, chili powder, cumin, garlic powder, salt, and black pepper until smooth
  4. Add the corn, bell pepper, onion, jalapeño, and cilantro to the bowl and gently fold everything together
  5. Refrigerate the salad for at least 30 minutes to let flavors meld
  6. Just before serving, fold in the Frito chips to maintain their crunch

Notes

Store the Frito chips separately from the salad mixture to prevent sogginess.
