Easy Ground Beef Zucchini Boats are a quick and satisfying meal, combining ground beef, fresh zucchini, and melted cheese in just 35 minutes. Perfect for busy weeknights.

4 medium Zucchini
1 lb Lean Ground Beef
1 tbsp Olive Oil
1 small Onion, diced
2 cloves Garlic, minced
1 (8 oz) can Tomato Sauce
1 tsp Dried Italian Seasoning
½ tsp Salt
¼ tsp Black Pepper
1 cup Shredded Mozzarella Cheese
2 tbsp Fresh Parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the zucchini, slice in half lengthwise, and scoop out seeds to create boats. Season with salt and pepper
  2. In a large skillet, heat olive oil and brown the ground beef for 5-7 minutes until fully cooked. Drain excess grease
  3. Add diced onion to the skillet, cooking until translucent. Stir in minced garlic and cook for 1 minute until fragrant
  4. Mix tomato sauce, Italian seasoning, salt, and pepper into the beef mixture. Simmer for 2-3 minutes
  5. Spoon the ground beef mixture into the zucchini boats, mounding slightly
  6. Bake for 15 minutes. Then sprinkle mozzarella cheese on top and bake for an additional 5-10 minutes until the cheese is melted and bubbly
  7. Remove from the oven, let cool slightly, and garnish with parsley before serving

Notes

Choose firm, medium-sized zucchini for best results.
