4 breasts Chicken (about 1.5 lbs)
3 tablespoons Honey
3 tablespoons Lime juice
2 tablespoons Soy sauce
2 cloves Garlic
1 teaspoon Ginger
1 tablespoon Olive oil
1/2 teaspoon Salt
1/4 teaspoon Black pepper
2 large Ripe mangoes
1/4 cup Red onio
1/4 cup Cilantro
1/2 – 1 Jalapeño
1 tablespoon Lime juice
Pinch of salt

Instructions

  1. Prepare the Chicken Marinade: In a shallow dish or a zip-top bag, combine the honey, 3 tablespoons of fresh lime juice, soy sauce, minced garlic, grated ginger, salt, and black pepper. Whisk until combined
  2. Marinate the Chicken: Add the chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours
  3. Make the Mango Salsa: Combine the diced mangoes, red onion, cilantro, jalapeño, and 1 tablespoon of lime juice in a bowl. Stir and set aside
  4. Cook the Chicken: Heat olive oil in a skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes per side until cooked through
  5. Rest the Chicken: Remove the chicken and let it rest for 5 minutes
  6. Serve: Slice the chicken and serve it topped with mango salsa
