1.5 lbs Boneless, Skinless Chicken Thighs, cut into 1-inch cubes
3-4 medium Ripe but Firm Peaches, peeled (optional), pitted, and cut into 1-inch wedges
2-3 medium Jalapeños, sliced into 1/2-inch thick rounds
1 small Red Onion, cut into 1-inch pieces
3 tbsp Olive Oil
2 tbsp Honey or Maple Syrup
2 tbsp Lime Juice, freshly squeezed
1 tbsp Soy Sauce, low sodium
2 cloves Garlic, minced
1 tsp Smoked Paprika
1/2 tsp Cumi
1/2 tsp Salt, to taste
1/4 tsp Black Pepper, fresh ground
8-10 Wooden Skewers, soaked in water for at least 30 minutes

Instructions

  1. Prepare the Skewers: Immerse wooden skewers in water for at least 30 minutes to prevent burning
  2. Cut the Chicken: Cut chicken thighs into uniform 1-inch cubes
  3. Prepare the Peaches and Vegetables: Cut peaches into wedges, slice jalapeños, and cut red onion into pieces
  4. Whisk the Marinade: Combine olive oil, honey/maple syrup, lime juice, soy sauce, garlic, smoked paprika, cumin, salt, and pepper in a bowl and whisk until combined
  5. Marinate the Chicken: Add chicken to the marinade, coat well and refrigerate for at least 30 minutes
  6. Assemble the Skewers: Thread chicken, peach wedges, jalapeños, and onion onto skewers, alternating ingredients
  7. Preheat Your Grill: Preheat grill to medium-high heat (400-450°F / 200-230°C) and oil the grates
  8. Grill the Skewers: Cook skewers for 4-6 minutes per side until chicken is cooked through and has nice char marks
  9. Rest and Serve: Remove from grill and let rest for 5 minutes before serving

Notes

Choose ripe but firm peaches for best results.
