This Jalapeno Peach Chicken recipe combines the sweet, juicy burst of ripe peaches with the fiery kick of jalapeños and tender chicken for a vibrant and delicious meal that is perfect for busy weeknights or gatherings.

1.5 lbs Boneless, Skinless Chicken Thighs
3-4 medium Fresh Peaches
2-3 Fresh Jalapeños
1/2 medium Red Onio
3 cloves Garlic
1 inch piece Ginger
1/4 cup Soy Sauce
2 tbsp Honey
1 tbsp Rice Vinegar
1 tbsp Cornstarch
2 tbsp Olive Oil
1/2 tsp Salt
1/4 tsp Black Pepper
1/4 cup Fresh Cilantro
1 tsp Sesame Seeds

Instructions

  1. Pat the chicken pieces dry and season with salt and black pepper
  2. In a bowl, whisk together soy sauce, honey, and rice vinegar, and set aside. Mix cornstarch with cold water to create a slurry
  3. Heat olive oil in a skillet over medium-high heat. Sauté red onion for 2-3 minutes, then add minced garlic and grated ginger for another minute
  4. Add seasoned chicken to the skillet and sear for 3-4 minutes per side, until golden brow
  5. Combine all ingredients in the skillet, pour in the sauce and simmer. Add peaches and jalapeños, stirring gently
  6. Mix in the cornstarch slurry to thicken the sauce and cook until it clings to the chicken and peaches
  7. Garnish with fresh cilantro and sesame seeds before serving

Notes

Select ripe, firm peaches for best results.

Do not overcrowd the pan while searing the chicken.

Adjust the spice level by removing jalapeño seeds.
