This quick marinated tomatoes recipe captures the essence of summer with fresh, ripe tomatoes transformed by a simple marinade of olive oil, vinegar, garlic, and herbs. It's a refreshing side dish that complements grilled meats, pasta, and much more.

2 lbs Ripe Tomatoes
1/4 cup Extra Virgin Olive Oil
2 tbsp Red Wine Vinegar
2-3 cloves Fresh Garlic
1/4 cup Fresh Basil
2 tbsp Fresh Parsley
1 tsp Granulated Sugar
1 tsp Salt
1/2 tsp Black Pepper

Instructions

  1. Prepare the Tomatoes: Wash tomatoes thoroughly, core and slice larger ones, or halve cherry tomatoes. Place in a large mixing bowl
  2. Mince Garlic & Chop Herbs: Mince garlic and chop fresh basil and parsley
  3. Whisk the Marinade: In a small bowl, combine olive oil, vinegar, minced garlic, sugar, salt, and pepper. Whisk until combined
  4. Combine & Toss: Pour marinade over tomatoes, add herbs, and toss gently to coat
  5. Marinate: Cover and refrigerate for at least 30 minutes, preferably 2-4 hours for best flavor
  6. Serve: Toss again before serving and adjust seasoning as needed

Notes

Always use the freshest tomatoes for the best flavor.

Do not let the tomatoes marinate for too long to avoid them becoming mushy.

Bring marinated tomatoes to room temperature before serving for optimal flavor.
