A refreshing and nutritious Protein-Packed Mango Chickpea Salad that combines sweet mango, earthy chickpeas, and fresh vegetables, ideal for a light meal or side dish.

Ingredients

2 (15-ounce) cans Chickpeas, rinsed and drained
2 large Ripe Mangoes, peeled, pitted, and diced
1 large Red Bell Pepper, diced
1 large Cucumber, deseeded and diced
½ small Red Onion, finely diced
½ cup Fresh Cilantro, chopped
¼ cup Fresh Parsley, chopped
3 tablespoons Lime Juice (from 2-3 limes)
2 tablespoons Extra Virgin Olive Oil
1 tablespoon Maple Syrup or Agave Nectar (optional)
1 teaspoon Ground Cumi
½ teaspoon Chili Powder (or to taste)
½ teaspoon Salt (or to taste)
¼ teaspoon Black Pepper (or to taste)
¼ teaspoon Red Pepper Flakes (optional)

Instructions

  1. Rinse the canned chickpeas under cold running water, drain well, and place them in a large mixing bowl
  2. Dice the ripe mangoes, red bell pepper, and cucumber, finely dice the red onion, and add all to the bowl with the chickpeas
  3. Chop the fresh cilantro and parsley, then add them to the bowl and toss gently to combine
  4. In a separate bowl, whisk together the lime juice, olive oil, maple syrup (if using), cumin, chili powder, salt, black pepper, and red pepper flakes until well combined
  5. Pour the dressing over the salad and fold gently to combine. Cover and refrigerate for at least 30 minutes before serving
