1 ½ teaspoons Baking Powder
½ teaspoon Salt
1 cup Unsalted Butter
1 ½ cups Granulated Sugar
2 Large Eggs
2 tablespoons Fresh Lemon Zest
2 tablespoons Fresh Lemon Juice
1 cup Fresh Strawberries
1-2 drops Pink Food Coloring (optional)
2 cups Powdered Sugar
2 tablespoons Fresh Lemon Juice (for glaze)
2 tablespoons Strawberry Puree

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper
  2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
  4. Beat in the eggs one at a time, then mix in the lemon zest and juice, and food coloring if using
  5. Gradually add the dry ingredients, mixing until just combined
  6. Gently fold in the diced strawberries
  7. Chill the dough for at least 30 minutes
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them 2 inches apart
  9. Bake for 10-12 minutes until edges are lightly golden and centers are set
  10. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely
  11. Prepare the glaze by whisking together powdered sugar, lemon juice, and strawberry puree
  12. Drizzle or spread the glaze over cooled cookies and let set before serving
