1.5 lbs Boneless, Skinless Chicken Breasts
2 medium Zucchini
2 Bell Peppers
1 small Red Onio
1 pint Cherry or Grape Tomatoes
3 tablespoons Olive Oil
1 medium Lemo
4-5 cloves Garlic
1 teaspoon Dried Oregano
1/2 teaspoon Dried Thyme
1 teaspoon Salt
1/2 teaspoon Black Pepper
2 tablespoons Fresh Parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large, rimmed baking sheet with parchment paper
  2. Pat the chicken cubes dry with paper towels and place them in a large mixing bowl
  3. Chop the zucchini, bell peppers, and red onion into roughly 1-inch pieces and add them to the bowl with the chicke
  4. In a small bowl, whisk together the olive oil, minced garlic, dried oregano, dried thyme, salt, and black pepper. Pour this mixture over the chicken and vegetables and toss until evenly coated. Add the cherry tomatoes last and mix gently
  5. Spread the chicken and vegetables in a single layer on the prepared baking sheet, ensuring they have space to roast. Arrange lemon wedges among the ingredients
  6. Roast in the preheated oven for 20-25 minutes, until the chicken is cooked through and vegetables are tender. Stir halfway through cooking for even browning
  7. Remove from the oven, squeeze the juice from the roasted lemon wedges over the dish, garnish with fresh parsley, and serve immediately

Notes

For best results, do not overcrowd the pan while roasting.

Patting the chicken dry helps it to brown effectively.
