1 ½ cups Granulated Sugar
2 Large Eggs
2 teaspoons Vanilla Extract
3 cups All-Purpose Flour
1 teaspoon Baking Powder

6 Strawberry Pop-Tarts
2 cups Powdered Sugar (for frosting)
2-3 tablespoons Milk (for frosting)
A few drops Red or Pink Food Coloring (optional)

Instructions

  1. Prepare Pop-Tarts by crumbling three into fine pieces and dicing the remaining
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy
  3. Add eggs one at a time, mixing well after each, and stir in vanilla extract
  4. Whisk together flour, baking powder, and salt in a separate bowl
  5. Gradually mix dry ingredients into wet ingredients until just combined
  6. Fold in crumbled and diced Pop-Tarts until evenly distributed
  7. Chill dough in plastic wrap for 30 minutes to 2 hours
  8. Preheat oven to 375°F and prepare baking sheets
  9. Scoop and roll tablespoon-sized dough balls, bake for 8-10 minutes
  10. Cool cookies on baking sheets for 5 minutes, then transfer to a wire rack
  11. Whisk powdered sugar and milk for frosting, add food coloring if desired
