1 ½ cups Graham cracker crumbs
¼ cup Granulated sugar
½ cup Unsalted butter, melted
32 oz Cream cheese, full-fat, softened
1 ½ cups Granulated sugar
2 tablespoons All-purpose flour
4 Large eggs, room temperature
½ cup Sour cream, full-fat, room temperature
1 teaspoon Vanilla extract
1 teaspoon Lemon zest
2 cups Fresh mixed berries (strawberries, blueberries, raspberries)
2 cups Fresh peaches, sliced
¼ cup Apricot jam or glaze
1-2 tablespoons Water (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix thoroughly until the crumbs are evenly moistened. Press the mixture into the bottom of a 9-inch springform pan and bake for 8-10 minutes
  2. Reduce oven temperature to 325°F (160°C)
  3. In a large bowl, beat the softened cream cheese until smooth, then gradually add 1 ½ cups of sugar and mix until just combined
  4. Add the flour and mix on low speed until just incorporated. Then mix in the sour cream, vanilla extract, and lemon zest
  5. Add the eggs one at a time, mixing on low speed until just incorporated
  6. Pour the filling over the cooled crust in the springform pa
  7. Prepare a water bath by wrapping the springform pan with aluminum foil and placing it in a larger roasting pan filled with hot water halfway up the sides
  8. Bake for 60-75 minutes, until the edges are set but the center jiggles slightly
  9. Turn off the oven, prop the door open, and let cheesecake cool inside for 1 hour before transferring it to a wire rack to cool completely at room temperature
  10. Refrigerate for at least 6 hours or overnight
  11. Before serving, arrange fresh berries and peach slices on top and glaze with melted apricot jam
