2 ½ cups All-purpose flour
½ cup Granulated sugar
1 cup Cold unsalted butter, cubed
½ teaspoon Salt
4-5 large Fresh ripe peaches, peeled, pitted, and sliced
¼ cup Granulated sugar (or to taste)
2 tablespoons Cornstarch
1 tablespoon Lemon juice
1 teaspoon Vanilla extract
8 ounces Cream cheese, softened
¼ cup Granulated sugar
1 Large egg yolk
½ teaspoon Vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 9×13 inch baking pan with parchment paper
  2. In a bowl, combine 2 ½ cups flour, ½ cup sugar, and ½ teaspoon salt. Mix well
  3. Cut in 1 cup cold, cubed butter until the mixture resembles coarse crumbs
  4. Press 2/3 of the crumb mixture into the bottom of the prepared pan, then bake for 12-15 minutes until golde
  5. Peel and slice the peaches, toss with ¼ cup sugar, 2 tablespoons cornstarch, 1 tablespoon lemon juice, and 1 teaspoon vanilla
  6. In a separate bowl, beat 8 ounces softened cream cheese and gradually add ¼ cup sugar, 1 egg yolk, and ½ teaspoon vanilla until smooth
  7. Spread peach filling over the crust, dollop cheesecake mixture on top, and swirl gently
  8. Sprinkle the remaining crumb mixture over the top and return to the oven to bake for 35-45 minutes until golde
  9. Cool at room temperature, then chill in the refrigerator for at least 4 hours before serving
